Tasting Notes: This unfiltered junmai ginjo reveals a beautiful Sauvignon Blanc color with complex aromatics of tropical pineapple, bright grapefruit, and earthy chestnut. The koji fermentation process creates a smooth, balanced profile that honors traditional Japanese brewing while embracing Rocky Mountain terroir.
Brewing Details: Crafted with premium California rice and pristine Rocky Mountain water through meticulous fermentation. Learn about our brewing process at our RiNo taproom. Our all-natural, gluten-free, and vegan sake contains no additives—just pure, artisanal quality. 13-15% ABV.
