Last Light Plum

Last Light Plum is Colorado Sake Co.'s one of our most adventurous releases yet—a spiced, fruit-forward Junmai Ginjo that honors tradition while blazing its own path. We began with Arkansas rice polished 60%, then took an unconventional turn: macerating whole, pit-free plums directly into the finished sake, folding in classic mulling spices (cinnamon, clove, star anise), and adding a whisper of blackberry to round the edges. The final touch? A cinnamon stick tucked into every bottle—a small ritual that signals this sake is something special.

The result is tart, vivid, and warming—stone fruit sweetness balanced by gentle spice and the clean, delicate grain of Junmai Ginjo. The blackberry doesn't announce itself; it simply softens the plum's edges, letting the stone fruit and spice shine. Sitting at 15% ABV with the the natural acidity keeping every sip refreshing.

If your looking for a fancy pairing serve it ice-cold with roasted pork belly and ginger glaze or duck confit with cherry gastrique.  Keep it simple with aged cheddar with spiced fig jam or pour it solo on an October evening, when the air turns crisp and the light fades to amber.
