Shinpaku translates to "White Heart" referring to the starchy white center of sake rice which separates it from your standard rice that we eat on a day to day basis.
Our Shinpaku is a tokubetsu style of sake (directly translates to special) meaning there is a special element incorporated into the brewing process. In this case we used a unique yeast blend and a polishing ratio that sits neatly between the styles of Junmai Ginjo and Junmai Dai Ginjo at 55%. Also separating Shinpaku from other styles is fermentation temperature we used, which also sat between the 2 aforementioned styles thus creating a sort of hybrid style.
