Cloud City

Sake wasn't always clear. That came later — with technology, with refinement, with the idea that elegance meant transparency. Before all of that, sake was cloudy. Thick with rice. Nigori is the word. It just means cloudy.

This is our first traditional nigori brewed specifically for Sake Social Club. Not a taproom rebottle. Not a greatest hit. Something new.

We pour a nigori at the taproom. People know it. But Cloud City isn't that sake.

This one comes from a different yeast — one that throws a lactic tartness into the fermentation. It changes everything. The sweetness is still there, the cream is still there, but now there's a bright edge holding it all in tension. Familiar shape. New engine.

  • Style: Junmai Ginjo Nigori (unfiltered, cloudy sake)
  • Rice Polish: 60%  (40% of the grain milled away)
  • ABV: 16%
  • Serving Temp: Cold, around 50°F
  • Pairings: Fried chicken, spicy tuna rolls, carnitas tacos, soft cheese with honeycomb

Tasting Notes

  • Aroma: Rice milk, ripe pear, soft lactic tang
  • Palate: Tart first, then sweet — melon, rice, bright acidity driving the pace
  • Texture: Thick, creamy, full-bodied; rice solids coat the glass
  • Finish: Clean tart snap that resets the palate and pulls you back
