
Colorado has always borrowed freely. We brew Japanese — careful, precise, rice-forward — but we live in bourbon country. For this release, we asked what happens when those two traditions spend time together.
This Junmai Ginjo was aged with American oak barrel pieces, which introduced char, vanilla, and a slow bittersweet depth that sake almost never carries. The base is clean and bright, the way a ginjo should be. The oak pushes back. At 16% ABV, it has more presence than most of what we make. Drink it cold, give it a minute, and let it open up. It earns the time.
